My mom gave us a new grill for Christmas! Woot!|
Does anybody have any favorite grilling recipes to recommend once it gets warmer?
This is one of the best-loved Slayerfest grilled items. It's pretty much my favorite of the lot. It's the chicken with the lemon grass and turmeric. It's referred to as "Indonesian Chicken Satay."
1 C sugar
3-4 cloves garlic
1/8 C coriander
1 TBS Turmeric
1/2 C lemon Grass
1-2 sliced jalapenos
(the above needs to be mortared together to release the jalapeno/lemony oils/blend) it makes a paste-type mixture.
1 C coconut milk
1/2 C fish sauce
1 TBS Lime
Mix all together with the pasty-stuff in a ziplock, and marinate 1-2 pounds chix cut into strips in it. (I do at least over night) Skewer the bits. Grill on high direct heat.
The cooked chicken is great as leftovers straight out of the fridge (i.e. cold), so, you know, grill the whole 1-2 pounds, and enjoy for multiple meals.
